HELLO

Hi. I'm Amanda...a happy wife and mom to three awesome guys. We've lived here in Fort Collins for more than 20 years and are proud to call it home. Before moving to CO, I worked at a city attorney's office, making use of my law and Master's degrees from Duke. After settling in Fort Collins, I homeschooled my three (now teenage and older) sons and was delighted to experience music classes, soccer, karate, swim team, archery, Science Olympiad, First Lego League, parkour, and climbing (not all at the same time!). From 2005-10, I was also a contributing editor for a national scrapbooking magazine, authoring a book and a couple of monthly columns. From 2009-10, I founded and ran the Good Grief Blog. I enjoy learning new things, spending time with my family, volunteering with The Matthews House, traveling and indoor rock climbing.

A plea for help...

Here's the deal. I, um, don't cook. Oh, I *can* if I have to, don't get me wrong. I can follow a recipe and all that. But, honestly, cooking is supremely not up there on my list of favorite things to do. (Fortunately, Nathan cooks. Yay!) One day maybe this will change. But I don't foresee that happening in the near future.  :)

But. Since Tiffany refuses to come cook for me and mine, and since our homeschool group is having a Halloween party soon...does anyone have any good and EASY recipes for me to try? The party is going to be a candy-free potluck and many present have difficulties with gluten and dairy. So. Ideas? I'm told that either entrees or veggie sides would be appreciated. I'm guessing a yummy dessert wouldn't be unappreciated.

Seriously, folks, I need ideas. :)

I have a recipe that is basically a sloppy joe that you put in a bread cup made from refrigerated biscuits and then you put a slice of cheese w/ a jack-o-lantern face cut out on top. It obviously has gluten and dairy, but if you want it, let me know.

How about G'ma's potato casserole? Easy and good!

Layer in 9X12 pan: 2# frozen hash browns and 5 oz. grated cheddar cheese (you can get this pre-grated in bags).
Mix and pour over potatoes and cheese: 2 cups sour cream, 1 can cream of chicken soup, 1/2 envelope onion soup mix or 1/2 cup chopped onion.
Sprinkle with another 5 oz. grated cheese.
Top with 1 cup cornflake crumbs (you can buy them in a box or crush with a rolling pin).
Drizzle 1/2 stick (or more) melted butter.
Bake at 350 for 1 hour.

I have a super pumpkin cake recipe (crust layer, pumpking layer, crumbly topping) if you want it. Email me and I'll give it to you - it is really good, and very fall-like.

I have an excellent chicken & wild rice casserole recipe. I don't know how much gluten and dairy are in it, but everyone else would like it ;o) . I have a ton of great recipes.

You could do a taco bar for the entree. I also have recipes for Chipotle chicken burritos - my DH loves them (so do my boys).

I would also be willing to help you cook (or cook it for you if you were nice ;o) ). Seriously, let me know and I'd be happy to assist you.

what about a nectarine upside down cake that uses whole spelt flour? (i'm pretty sure there's no gluten in it, but there is diary). you basically cook up a little yumminess(think fruit, butter, sugar and spices in a skillet) and then pour a cake you've mixed on top and bake. let me know if you'd like the recipe. either way, good luck!
